Sundays are all about brunch. And there’s no better way to set the tone for the day with a delicious, nutritious snack whose ingredients are carefully selected to give your body and your gut some love!

Ingredients (per serving)

1 slice whole grain bread
3 tablespoons finely chopped fresh mango
2 teaspoons red onion, finely diced
¼ teaspoon cayenne pepper
½ teaspoon fresh lime juice
2 tablespoons goat cheese (optional)
½ medium avocado, thinly sliced
2 teaspoons fresh coriander, chopped

Instructions

  1. Toast the bread.
  2. Combine mango and red onion in a bowl along with the cayenne pepper and lime juice.
  3. Spread goat cheese on the toasted bread and top with sliced avocado and mango mixture.
  4. Sprinkle with pepper and salt to taste.
  5. Garnish with chopped cilantro.
